Here’s my recipe for apology cookies. Miss E is starting to come around and I credit at least 60% of my success to these sweet little treats.
Makes 3-4 dozen
Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar (You can substitute white sugar mixed with a little molasses if you happen to have that)
2 eggs
2 teaspoons vanilla extract (A luxury these days! Unfortunately, there’s nothing that replaces this)
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips (crushed up chocolate bars will work in a pinch)
1 cup crushed macadamia nuts (I have a stash of these that I keep hidden just for these occasions)
1/2 cup of coconut
Directions:
- Preheat oven to 350 degrees F.
- Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Mix together flour, salt and baking soda. Fold in chocolate chips, coconut and nuts. Drop by large spoonfuls onto ungreased pans.
- Bake for about 10 minutes until cookies are not quite set. Let cool for 10 minutes (until just set but still warm).
Voila! The secret to a good apology starts with a good batter!
